Egg clouds with cheese

Ingredients for 2 servings:

  • 4 eggs
  • 2 tbsp Parmesan
  • 4 slice(s) cooked ham, finely chopped
  • 1 tbsp chives
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 26 minutes

Preheat the oven to 200°C. Separate the egg whites from the yolks. Be careful not to break the yolks. Beat the egg whites until stiff. Carefully fold in the cheese, bacon, and chives. Line a baking sheet with baking paper and place four clouds on it. Use a spoon to make a small hole in the center of each cloud. Bake for 3 minutes. Remove the sheet from the oven and place an egg yolk in the center of each cloud. Season with salt and pepper. Bake for 2-3 minutes, until the yolks have set.
