Ingredients for 4 servings:

  • 4 slices of toast
  • 2 tbsp butter
  • 4 eggs
  • 1 can of anchovies
  • 2 tbsp cheese, grated

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Toast the slices of bread, brush with butter, and place on a baking sheet. Separate the eggs and set the yolks aside in their shells. Whisk the egg whites until stiff peaks form. Puree the well-drained anchovy fillets and fold into the beaten egg whites. Spread this mixture on the toast. Drop an egg yolk into the center of each slice and sprinkle with cheese. Place the baking sheet on the middle rack of the preheated oven and bake for 10-12 minutes.
