Pear and red wine chutney

Ingredients for 1 servings:

  • 1 kg pear(s)
  • 3 onions, red
  • ½ piece(s) ginger, thumb-sized
  • 1 orange(s), untreated
  • 200 ml vinegar (honey vinegar)
  • 200 ml red wine, dry
  • 200 g sugar
  • 5 carnations
  • 1 stalk(s) cinnamon
  • 1 tsp black pepper from the mill
  • 1 pinch of nutmeg
  • 1 tsp salt

Peel and dice the pears, ginger, and onions. Zest the orange and then squeeze out the juice. Combine all ingredients in a large pot and bring to a boil. Then reduce the heat to low (this can take up to two hours). Stir well, especially towards the end, as the mixture can easily burn. Towards the end of the cooking time, purée lightly with a hand blender to ensure the mixture retains its chunky consistency. While still hot, pour into twist-off jars, seal immediately, and let cool upside down. This chutney goes well with game and dark meat.
