Egg in a bed of potatoes

Ingredients for 1 servings:

  • 1 potato(s), boiled (approx. 40 g)
  • 1 tsp oil
  • 1 small egg(s)
  • e.g. salt and pepper
  • n. B. Paprika powder, sweet

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Boil the potatoes in their jacket potatoes, not too soft, then peel and grate them. Grease one of the muffin tin wells for each serving with about 1 teaspoon of oil, line each well with the grated potato, and sprinkle with salt and pepper. Bake in a preheated oven at 200°C for about 10-15 minutes, until lightly browned. Remove the tin from the oven and place an egg in the well. Sprinkle with salt and pepper and a little paprika, if desired. Bake for a further 10-15 minutes, until the egg is set. Loosen the edges with a knife and lift out of the tin. Serve for brunch or breakfast, or for dinner with a salad, for example.
