Egg patties

Ingredients for 2 servings:

  • 4 eggs, hard-boiled
  • 1 egg(s)
  • 2 tbsp breadcrumbs
  • 2 spring onions
  • ½ bed of cress
  • 3 stalks of lovage
  • salt and pepper
  • turmeric
  • some oil for frying

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

vegetarian, low-carb

Chop the hard-boiled eggs into small pieces. Slice the spring onions into rings. Finely chop the lovage and cut the cress from the garden bed with scissors. Mix everything together with the breadcrumbs and the raw egg in a bowl and season well. Form the mixture into small patties/meatballs. Fry in a pan in moderately hot oil until golden brown. I serve with a yogurt dip and a green salad.
