Ingredients for 4 servings:
- 100 g bacon or dried meat
- 4 large eggs
- ½ liter of milk
- 4 tbsp, heaped flour
- 4 shots of Maggi
- some pepper as needed
- 4 pinches of salt
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Cut the bacon or jerked meat into small cubes (you can also buy it ready-made). Put 4 heaped tablespoons of flour into a glass or porcelain bowl and make a well. Crack the 4 eggs into the well. Sprinkle 4 pinches of salt over the eggs and add 4 dashes of Maggi (you can be generous). Season with pepper. Stir everything with a whisk until it forms a batter (a lot of force is sometimes necessary). First, stir 1/4 liter of milk into the batter, then slowly stir in the remaining milk. Stir until no flour is visible and a runny egg mixture forms. Then, fry the bacon in a hot frying pan (Teflon is best). Slowly pour the runny egg mixture from the bowl into the pan with the fried bacon. Stir constantly with a wooden spoon until the mixture forms a thick paste (smear). When stirring, be careful that the mixture does not stick to the edges of the pan. The egg yolk must spread nicely on the bread and be served hot.
