Ingredients for 4 servings:

  • 6 eggs
  • 1 small onion(s)
  • 250 g ham or bacon
  • 3 slices of white or brown bread
  • Salt and pepper, amount to taste
  • Parsley or chives, finely chopped

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Hearty, quick, my great-grandmother’s recipe.

Cut the bread and bacon or ham into cubes. Finely chop the onion. Crack the eggs into a bowl and whisk. Season with salt and pepper. Toast the bread and onions in a pan with a little butter or oil, then add the bacon or ham and fry briefly. Pour the eggs over the top and let them set. Finally, sprinkle with fresh parsley or chives.
