Eggnog muffins

Ingredients for 1 servings:

  • 4 eggs
  • 200 g powdered sugar
  • 2 packets of vanilla sugar
  • 200 ml oil
  • 200 ml egg liqueur
  • 100 g flour
  • 100 g cornstarch
  • 3 tsp baking powder
  • Powdered sugar for dusting
  • possibly grease for the mold

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

Preheat oven to 160-180°C (top/bottom heat). Beat eggs, powdered sugar, and vanilla sugar with a hand mixer on high speed for 1 minute until frothy. Stir in oil and egg liqueur. Sift together flour, cornstarch, and baking powder, and stir in portions on medium speed. Grease a muffin tin or line it with paper baking cups and fill with batter. Bake in the preheated oven for about 25 minutes. Let muffins cool for 10 minutes, then remove from the tin and dust with powdered sugar.
