Eggnog muffins with tangerines

Ingredients for 1 servings:

  • 150 g butter, soft
  • 175 g powdered sugar
  • 1 large egg(s)
  • 200 g flour
  • 7 g baking powder
  • 200 ml egg liqueur
  • 1 can of tangerine(s)
  • Powdered sugar, for dusting

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Line a muffin tin with paper cases, drain the mandarins in a sieve, and preheat the oven to 180°C. Cream the softened butter with the powdered sugar until creamy. Then stir in the egg until well combined. Mix the flour with the baking powder and stir in along with the egg liqueur. Pour 2/3 of the batter into the cases and top each muffin with two mandarins. Bake in the oven for about 25 minutes, or until golden brown. Remove from the oven and let stand in the tin for a few minutes. Cool on a wire rack and dust with powdered sugar before serving. This batter makes 16 muffins.
