Eggnog nut cherry cake

Ingredients for 1 servings:

  • 250 g margarine
  • 250 g sugar
  • 1 packet of vanilla sugar
  • 4 eggs
  • 320 g flour
  • 100 g cornstarch
  • 1 packet of baking powder
  • 150 g hazelnuts, ground
  • 100 g chocolate sprinkles
  • 125 ml eggnog
  • 2 jars of sour cherries, well drained
  • 250 g flour
  • 100 g sugar
  • 200 g butter, very soft
  • 1 tsp cinnamon

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Streusel cake from the tray

Grease a baking sheet and set aside. Preheat oven to 200°C. Place cherries in a sieve and let drain. For the batter, beat the sugar and vanilla sugar with the eggs until fluffy. Add the margarine and mix. Mix together the flour, cornstarch, baking powder, and nuts and stir into the batter alternately with the egg liqueur. Finally, add the chocolate sprinkles and mix in. Spread the batter evenly on the prepared baking sheet. Spread the drained cherries over the batter. For the crumble, knead the flour, sugar, cinnamon, and softened butter into a crumble and spread over the cherries. Bake in the oven on the bottom rack at 200°C fan/convection oven for about 30-40 minutes. Do the skewer test. Let cool thoroughly and cut into pieces.
