Eggnog poppy seed apple cake

Ingredients for 1 servings:

  • 700 ml eggnog
  • Grind 500 g poppy seeds (blue poppy seeds).
  • 500 g apples, approx., coarsely grated
  • 100 g rice, grind (brown rice)
  • 8 waffles (rice cakes)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 50 minutes

Gluten-free and dairy-free

Pour the eggnog into the mixing bowl of a food processor and grind in the poppy seeds. Add the grated apples, removing only the stems and blossoms, and the ground brown rice. Mix on medium speed for 3-5 minutes. Line a ring tin with parchment paper, spread the crumbled rice cakes on the bottom, pour the poppy seed mixture on top, shake until smooth, and bake in a cold oven at approximately 155°C (311°F) for about 90 minutes. Check the needle for the mixture. My own recipe.
