Eggplant alla Rosa

Ingredients for 4 servings:

  • 2 m.-large eggplant(s)
  • 1 bunch of parsley
  • 4 cloves garlic, finely chopped
  • e.g. olive oil
  • e.g. sheep’s cheese

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Finely chop the garlic and parsley and mix together. Halve the eggplants lengthwise. Use a knife to cut diamond-shaped slices into the flesh. Be careful not to pierce the skin! Spread the parsley and garlic mixture into the slices and drizzle with olive oil. Place the eggplants cut-side up in a baking dish and bake in the oven for about 30 minutes. The eggplants should be golden brown. Grate feta cheese over them before serving.
