Eggplant, apple and bacon skewers

Ingredients for 4 servings:

  • 1 large eggplant(s), cut into pieces
  • 2 apples, unpeeled and cut into wedges
  • 200 g bacon, cut into large cubes
  • some pepper, from the mill
  • some olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Barbecue idea

Season the eggplant pieces, brush with olive oil, and thread them onto skewers, alternating with the bacon and apple slices. Brush aluminum foil or an aluminum grill tray with olive oil and place the skewers on top. Grill over medium heat for about 20-25 minutes, turning frequently. Serve with a garlic dip.
