Eggplant Burger

The perfect eggplant burger recipe with a picture and simple step-by-step instructions.

  • 500 g Mixed minced meat
  • 1 large Eggplant fresh
  • 1 packet Mozzarella
  • 3 tsp Mustard
  • 1 handful Chives
  • 3 leaves Basil
  • Salt
  • Pepper
  • Paprika
  • 1 Pc. Egg
  1. Work the minced meat with chives (rolls), salt, pepper, paprika powder, basil leaves (small chopped) and the egg into a mass.
  2. 6 Cut aubergine thalers a little thicker (for the bottom) and 6 thinner thalers.
  3. Brush the thicker thalers with mustard and place in a suitable dish.
  4. Shape the mince into small, suitable meatballs and place on the thalers.
  5. Put thinner eggplant thalers on top (as a lid)
  6. Cut the mozzarella into slices and place on the burgers.
  7. Put in the oven and bake at 200 degrees for 30-40 minutes.
