Eggplant cream with sesame paste

Ingredients for 1 servings:

  • 500 g eggplant(s)
  • 4 tbsp sesame paste
  • 3 garlic cloves
  • 3 tbsp olive oil
  • lemon juice
  • salt and pepper
  • chili flakes

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Preheat the oven to high. Halve the eggplants, pierced with a fork, and place them cut-side down on a rack in the oven and bake for about 30 minutes, until tender. Scoop out the flesh. Roughly chop the garlic cloves and blend with the eggplant flesh, sesame paste, and olive oil. Season the cream with lemon juice, salt, and pepper. Sprinkle with chili flakes and serve.
