Ingredients for 1 servings:

  • 1 large eggplant(s)
  • 2 tsp lime juice
  • 1 tsp lime(s), grated zest
  • 2 garlic cloves, finely chopped
  • salt and pepper
  • 1 ½ tsp olive oil
  • ½ bunch parsley

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

low-calorie and healthy

Boil the eggplant in salted water for 20 minutes, let it cool, scrape the flesh from the skin, and puree it. Mix with the remaining ingredients (or puree everything together), season to taste, and serve with toasted strips. I puree everything, but mix in the finely chopped parsley. Despite its very low calorie count, it’s incredibly filling and tastes delicious.
