Ingredients for 1 servings:

  • 1 eggplant(s)
  • 2 tomatoes
  • 100 g feta cheese
  • oregano
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Wash and slice the eggplant. Sprinkle both sides with salt and let it rest for a while. Then pat the eggplant dry with a paper towel and season with oregano. Slice the tomatoes and feta cheese as well. Grill one side of the eggplant, then flip it over and place the tomatoes and feta cheese on the grilled side. Let this combination sit on the grill for a while and season with salt and pepper. Serve with a salad, and your low-carb meal is complete.
