Ingredients
- 1 size Eggplant fresh
- Salt
- 3 tbsp Olive oil
- 1 small Onion
- 1 small Clove of garlic
- 2 tbsp Tomato paste
- 3 tbsp Red wine
- Pepper from the grinder
- 0,5 tsp Rose paprika powder
- 250 g Minced meat
Instructions
- Wash and clean the aubergine and cut it long into slices. Place in salted water for about 10 minutes. Then pat dry with kitchen paper. Heat 1 1/2 tablespoons of oil in a pan and fry the aubergine slices on both sides. Peel and chop onion and garlic clove. Stew in 1 tablespoon of hot olive oil. Add minced meat and fry. Add tomato paste, red wine and spices. Preheat the oven to 180 degrees (fan oven 160 degrees). Cover the aubergine slices with the mince, roll up and pin. Place in a baking dish, brush with the remaining oil and bake in the oven for about 10 minutes. Serve hot.
