Eggplant towers

Ingredients for 3 servings:

  • 6 slice(s) of eggplant(s), approx. 1.5 cm. thick
  • 200 g minced beef
  • 12 slice(s) cheese, thinly sliced
  • 1 m.-large beef tomato(s), diced
  • 1 tbsp, heaped tomato paste
  • some salt and pepper
  • 1 pinch(s) of oregano
  • Olive oil for frying
  • 1 pinch of chili powder
  • 100 ml water

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Brown the eggplant slices in a grill pan with olive oil and then set aside. Roast the diced tomatoes with the tomato paste in a little oil and deglaze with the water, seasoning with salt, pepper, chili, and oregano. You should have about 6 tablespoons of thick sauce. Season the minced meat with salt and pepper and form very thin patties the size of the eggplant. There should be 6 slices again. First, cover the eggplant slice with the patty. Add a spoonful of tomato sauce and a slice of cheese. Repeat this process twice. Place the towers in an ovenproof dish. Bake in an oven preheated to 200°C (top/bottom heat) for about 20 minutes on the middle rack. This makes 6 towers and, with bread, is enough for a full meal.
