Ingredients for 4 servings:

  • 500 g strawberries
  • 25 elderflower heads
  • 1 liter of water
  • 1 lemon(s)
  • 500 g gelling sugar, 2:1

with homemade elderflower juice!

The elderflower heads should be in full bloom. Rinse them to remove any remaining insects, then pour 1 liter of water over them. Slice the lemon and add to the pot. Let it steep for 2 hours. Bring to a boil and let it steep overnight. The next day, strain the heads and lemon slices. Measure out 400 ml of juice and puree it with the chopped strawberries in a blender. Add the gelling sugar and bring to a boil while stirring. Boil for 4 minutes (while stirring) and immediately pour into hot, rinsed jars. Seal the jars and turn them upside down for 10-15 minutes. The leftover juice can be boiled down to make elderflower syrup, for example. Simply add the sugar and simmer gently until it thickens.
