Elderberry fritters

Ingredients for 4 servings:

  • 12 elderflower umbels
  • 2 eggs
  • 2 tbsp mineral water
  • 1 tbsp sugar
  • 4 tbsp flour
  • 1 pinch of baking powder
  • 3 tbsp milk
  • 100 g margarine
  • powdered sugar
  • Fat

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Beat the eggs and mineral water thoroughly. Add the sugar, sifted flour mixed with baking powder, and milk. Stir everything together to form a not-too-thick batter. Carefully wash the elderflowers and drain well. Dip each blossom into the batter and quickly fry them in hot oil. Briefly place the blossoms on kitchen paper, dust with powdered sugar, and serve hot.
