Dragon's baked elderberry

Ingredients for 2 servings:

  • 8 elderflower umbels
  • 2 eggs
  • 60 g powdered sugar
  • 30 g flour
  • 1 pinch of salt
  • 60 g milk
  • Cinnamon and sugar mixture
  • Fat for the deep fryer or pan

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Clean the elderflower heads. Separate the eggs and beat the egg whites until stiff. Fold in the powdered sugar and flour. Whisk the egg yolks with milk and salt and mix with the beaten egg whites. Hold the elderflower heads by the stem, dip them in the batter, and fry them in the fat in a pan. When they are golden brown, trim the stems with scissors and turn the flowers over. Serve the finished elderflower cakes with a mixture of sugar and cinnamon. Vanilla sauce also goes well with them.
