Ingredients for 1 servings:

  • 250 g elderberries
  • 250 g rock sugar, Klutjen-
  • 1 star anise
  • 1 stalk(s) cinnamon
  • 1 bottle of schnapps (grain, 32%)

a liqueur that is very drinkable

Remove the stems from the ripe elderberries, rinse them, and weigh out approximately 250 g. Place them in a large jar. Also weigh out the sugar candy (200-250 g to taste). Add the star anise and cinnamon stick to the jar and fill with schnapps. Seal the jar tightly and let it steep in a sunny spot for 6-8 weeks (longer is possible). Once the liqueur has steeped, strain everything (first through a sieve, then through a paper towel, and then through cotton pads) and bottle. The liqueur can then be stored in the cellar for another 6-8 weeks (or longer).
