Elderberry – Pear – Jam
The perfect elderberry – pear – jam recipe with a picture and simple step-by-step instructions.
- 0,5 Lemon fresh
- 2 Pears fresh
- 50 g Dried cranberries
- 0,5 Cinnamon stick
- 3 Cloves
- 1 Star anise
- 500 Milliliters Elderberry juice
- 400 g Preserving sugar 2: 1
- 2 Centiliters Creme de cassis
- Squeeze the lemon. Quarter and peel the pears, remove the core and grate coarsely. Mix with the lemon juice (made 185 g for me). Add the cranberries.
- Put the whole thing together with the spices, elderberry juice and preserving sugar in a large saucepan. Bring to the boil while stirring and let simmer for 4 minutes.
- Remove the spices … I didn’t find my cloves again 😉 Stir in the liqueur. Pour the jam into clean, prepared twist-off glasses. Close immediately and place on the lid for about 10 minutes. Turn around again.
