Elderberry – Pear – Jam

The perfect elderberry – pear – jam recipe with a picture and simple step-by-step instructions.

  • 0,5 Lemon fresh
  • 2 Pears fresh
  • 50 g Dried cranberries
  • 0,5 Cinnamon stick
  • 3 Cloves
  • 1 Star anise
  • 500 Milliliters Elderberry juice
  • 400 g Preserving sugar 2: 1
  • 2 Centiliters Creme de cassis
  1. Squeeze the lemon. Quarter and peel the pears, remove the core and grate coarsely. Mix with the lemon juice (made 185 g for me). Add the cranberries.
  2. Put the whole thing together with the spices, elderberry juice and preserving sugar in a large saucepan. Bring to the boil while stirring and let simmer for 4 minutes.
  3. Remove the spices … I didn’t find my cloves again 😉 Stir in the liqueur. Pour the jam into clean, prepared twist-off glasses. Close immediately and place on the lid for about 10 minutes. Turn around again.
