Ingredients for 1 servings:
- 3 kg elderberries, washed and cleaned
- 10 coriander seeds
- 1 stalk(s) cinnamon, roughly broken, 2 star anise
- 2 pinch(s) vanilla powder
- 1 pack of citric acid
- 2 kg sugar
- ½ lemon(s) / peel thereof

Place the elderberries in a pot and mix with the spices. Cover with water and simmer for 30 minutes. Strain the juice through a cheesecloth into another pot, ideally letting it drain overnight. Measure the resulting juice, mix it with 500g of sugar (the sugar in the ingredients list is only an approximate amount) to make 1 liter of juice, simmer for another 5 minutes, and pour it into clean, rinsed bottles while still hot. Seal.
