Ingredients for 4 servings:

  • 150 ml syrup (elderflower syrup)
  • 50 ml water
  • 50 ml cream
  • 1 ½ sheets of gelatin

light summer dessert with a wonderful aroma, a nice addition to strawberries

This recipe is intended as a guideline. The taste can vary greatly depending on the elderflower syrup you use. I always use my homemade one (recipe in my profile). I recommend testing this espuma and then adjusting the quantities if necessary. The total liquid volume should always be 250 ml. The syrup may need to be sweetened more or lemon juice added. This is a matter of personal taste. Soak the gelatine in cold water. Mix the elderflower syrup with the cream. Heat the 50 ml of water and dissolve the well-squeezed gelatine in it. Add about 1/3 of the elderflower mixture and stir in. Then stir this into the remaining elderflower mixture. Pour everything into the isi and screw in two capsules one after the other. Refrigerate the isi for about 30 minutes. Spray the espuma into small glasses and serve immediately.
