Wash and quarter the lemon, then place it in a glass carafe with the zest. Peel the ginger, slice it, and add it to the lemon in the glass carafe. Wash the mint. Pick the leaves from one of the stems and add it to the carafe. Sprinkle the sugar over the fruit and mint leaves, pressing down gently with a wooden spoon to release the juice. Be careful not to mash it. Now add the syrup and top up with 700 ml of well-chilled water. Stir well. Add the two remaining mint sprigs and let the lemonade steep for 1-2 hours. Note: Always stir gently before pouring into glasses so that any undissolved sugar is stirred and mixed with the lemonade. If you like, you can decorate the glasses with mint sprigs. You can refill the lemonade two or three more times with syrup to water in a ratio of 1:7.
