Ingredients for 1 servings:
- 1,200 ml water
- 11 elderflower umbels
- 3 limes
- 500 g gelling sugar, 3:1
Instructions
Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes
Shake the elderflowers thoroughly and check for insects. Cut the limes into 2-3 mm thick slices. Add the blossoms and slices to 1200 ml of cold water, stir once, and let it steep for 24 hours (or even in the refrigerator). After 24 hours, strain the liquid and boil it with the gelling sugar according to the package instructions. Then pour into suitable jars. Note: Even if the brew doesn’t look, smell, or taste great after 24 hours, don’t be surprised. It smells wonderful while cooking. The lime zest that comes with it gives the whole thing a slightly bitter note. If you don’t like that, you could use just the zest of one lime and peel or fillet the others. I wouldn’t juice it, as it might be too acidic. I haven’t tried it yet, though.
