Ingredients for 4 servings:
- 1 eggplant(s)
- oil
- 2 tbsp mayonnaise
- 4 garlic cloves
- Cayenne pepper
- Chili pepper
- 1 bunch of parsley
- possibly yogurt
- Salt
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
with mayonnaise dip
Wash the eggplant, slice it, season it with salt, and set it aside to drain. Then pat it dry with a paper towel and fry it in oil on both sides. Let the fried slices cool. Mix the mayonnaise with the chopped parsley and garlic, and season with salt and pepper. Spread the dip over the eggplant and arrange on plates. If mayonnaise is too fatty for you, you can use 1 tablespoon of yogurt and 1 tablespoon of mayonnaise instead of 2 tablespoons of mayonnaise.
