Emily's fried potatoes with leeks and apples

Ingredients for 4 servings:

  • 800 g potatoes
  • 2 stalk(s) leeks
  • 2 apples
  • 1 dashes lemon juice
  • some marjoram
  • some thyme
  • some rosemary
  • 4 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 5 minutes

Peel the potatoes and steam for about 20 minutes. Let them cool, cut into thin slices, and fry in half the oil in a pan for about 5 minutes until golden brown. Season with salt and pepper. Wash the leek, halve it lengthwise, and slice it. Wash the apples, quarter them, remove the cores, and thinly slice them. Remove the potatoes from the pan, add the remaining oil, leek, and apple slices, and sauté over medium heat for about 5 minutes. Stir in the potatoes again, then season to taste with lemon juice, salt, pepper, and spices.
