Enchiladas in cheese sauce

Ingredients for 3 servings:

  • 6 wraps
  • 600 g minced meat, mixed
  • 1 small can of corn
  • 1 can red beans (425 ml)
  • 2 onions
  • 2 garlic cloves
  • 400 g cream
  • 200 g cream cheese
  • 50g Gouda
  • 100 ml milk
  • 2 tsp, heaped stock powder (beef/chicken/vegetable)
  • 1 shot of BBQ sauce, hot, or other spicy sauce
  • 50 g butter for the mold

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Sauté the finely diced onions in a saucepan and add the ground beef. After browning the ground beef, add the corn and red beans. Season the ground beef with hot sauce to taste. For the sauce, heat the cream, cream cheese, and Gouda in a second saucepan until the cheese has melted, then press in the garlic cloves. Season the sauce with the stock powder to taste. Then roll the ground beef mixture into the wraps and place them in a buttered baking dish. Pour the cheese sauce over the wraps. Tip: If desired, you can top the wraps with Gouda cheese. Cook covered at 180 degrees for about 20 minutes, then bake uncovered for about another 10 minutes.
