Vegetable rice casserole with minced meat

Ingredients for 4 servings:

  • 200 g rice
  • 300 g minced meat
  • 250 g peas, frozen
  • 4 carrots
  • 1 bell pepper(s)
  • 1 onion(s)
  • 1 garlic clove(s)
  • some water
  • Broth powder
  • salt and pepper
  • Cayenne pepper
  • 1 cup of sour cream, approx. 200 g
  • 200 g cheese, grated

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

for a casserole dish

Cook the rice according to the package instructions. Meanwhile, fry the ground beef. Peel and dice the onion and garlic clove. Add them and fry. Dice the bell pepper. Peel and dice the carrots, and add them along with the peas and a little water. Sauté until almost cooked, then season well. Stir in the sour cream and rice. Pour everything into a baking dish and sprinkle with cheese. Bake in a preheated oven at 200°C (top/bottom heat) for about 20-25 minutes on the middle rack.
