Endive salad with onion and mustard marinade

Ingredients for 4 servings:

  • 1 large lettuce (endive)
  • 1 m.-sized onion(s)
  • 2 tbsp mustard, medium hot
  • Vinegar (herbal)
  • 2 tbsp oil
  • salt and pepper
  • Sugar

Working time approx. 10 minutes; Total time approx. 10 minutes

Goes great with potato and zucchini fritters

Cut the endive into thin strips and wash thoroughly, then drain well in a sieve. For the marinade, finely dice the onion and mix with the mustard and herb vinegar. Season to taste with salt, pepper, and a pinch of sugar. If the marinade is too strong, you can make it milder by adding a little water. Finally, mix in the oil. Add the endive just before serving and mix well. The slightly bitter flavor of the endive blends wonderfully with the onion and mustard marinade. We serve this with potato and zucchini fritters topped with Limburger cheese and a mixture of tomato paste and horseradish.
