Ingredients for 4 servings:

  • 4 carrots
  • ½ celery root
  • 1 large onion(s)
  • 4 parsnips
  • 200 g broccoli
  • 50 g mountain lentils
  • 50 g pearl barley
  • 50 g buckwheat
  • 1 stalk(s) leek
  • n. B. Salt
  • n. B. Pfeffer
  • 1 tbsp lovage
  • e.g. marjoram
  • 3 potatoes

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Good vegetable soup with grains

Peel and dice the onion, then sauté in a little oil in a large pot. Finely slice the carrots, parsnips, and leeks and add them to the onions. Peel and dice the potatoes, then add them to the pot with the remaining vegetables. Roast everything for a while, then deglaze with a liter of water. Rinse the lentils, pearl barley, and buckwheat with hot water and add to the pot. Mix in the salt, pepper, and herbs. Simmer everything with the lid on for at least 20 minutes. After 20 minutes, add the broccoli and simmer for another five minutes. Tip: You can be creative with both the vegetables and the grains. Anything that tastes good is allowed.
