Ingredients for 4 servings:
- 1 liter of milk
- 100 g semolina
- 2 eggs
- 80 g sugar
- 1 lemon(s) (organic), peel
- butter
- Salt
- powdered sugar

Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes
Semolina Pudding
Heat half a liter of milk, add a pinch of salt and the semolina, stirring constantly, and cook until a firm consistency forms. Remove the pan from the heat. In a second bowl, mix the eggs, sugar, and grated lemon zest well, then add the remaining cold milk. Slowly mix the contents of the second bowl with the cooked semolina. Transfer everything to a buttered ovenproof dish or gratin dish. Sprinkle with butter flakes and bake in a preheated oven at 150°C (convection oven) for 35-45 minutes. Sprinkle with icing sugar and serve.
