Ernstl's simple roast chicken

Ingredients for 2 servings:

  • 1 chicken (roast chicken), ready to cook
  • 4 tbsp oil
  • Cayenne pepper
  • Paprika powder, sweet
  • Salt
  • Thyme
  • basil

Prepare a roasting pan for the oven and place the chicken in it. Brush the chicken with oil and then rub in the spices and herbs (feel free to use your hands to rub the herbs and spices in thoroughly). Make sure the chicken is coated all over and don’t skimp on the salt. Important: Salt and rub the inside of the chicken as well! Now the chicken goes into the oven for 30 minutes at 180°C. Then turn it over and roast for another 40 minutes. When the chicken is nicely browned, remove it from the oven and cut it into pieces using poultry shears. Note: If using the meat juices, be sure to add a little butter 20 minutes before the end of the cooking time and stir in 1 tablespoon of honey at the end if desired. Important: With this recipe, skip the pouring! The chicken will be crispy on the outside and tender and juicy on the inside.
