Espresso quark waffles

Ingredients for 6 servings:

  • 2 eggs
  • 60 g sugar
  • 1 packet of vanilla sugar
  • 100 g quark
  • 200 g flour
  • 2 tsp, leveled baking powder
  • 50 ml whipped cream
  • 100 ml espresso or strong coffee
  • Powdered sugar for dusting
  • Fat for the waffle iron

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 55 minutes

Brew an espresso or strong coffee and let it cool. Beat the eggs with the sugar and vanilla sugar until frothy, then add the quark. Then briefly stir in the flour mixed with the baking powder, alternating with the cream and espresso, until a smooth batter forms. Let it rest for 30 minutes. Bake 6-8 waffles in a hot, well-greased waffle iron and then dust with powdered sugar. Serve with vanilla ice cream and whipped cream, which you can mix with instant espresso or cappuccino powder for even more coffee flavor. If you like, you can also replace 20 ml of espresso in the batter with coffee liqueur.
