Ingredients for 4 servings:
- ¼ watermelon(s)
- 1 pack of feta cheese made from sheep’s milk
- 3 spring onions
- ½ bunch mint
- Olives, pitted
- olive oil
- Balsamic vinegar, white
- salt and pepper
Instructions

Minty-fresh
Dice the watermelon flesh and feta. Finely slice the spring onions, finely chop the mint, and quarter the olives. Place everything in a bowl. Mix olive oil, balsamic vinegar, pepper, and salt to make a vinaigrette and drizzle over the salad. Enjoy slightly chilled!
