Ingredients for 2 servings:
- 300 g zucchini, cut into larger cubes
- 2 can/n tomatoes, peeled
- 400 g minced turkey or mixed
- Rosemary, thyme, marjoram, oregano
- ½ can coconut milk
- 1 onion(s), chopped
- ½ garlic clove(s)
- Olive oil, for frying
- salt and pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Brown the ground beef until crispy and stir with a whisk until crumbly. Season with salt and pepper. Then add the onion, garlic, and zucchini and sauté until the zucchini is almost cooked. Add the peeled tomatoes and simmer for about 10-15 minutes. Then add the herbs and finally, pour in the coconut milk (amount to taste). I serve this with baguette or whole-wheat pasta, but it’s certainly delicious with rice too.
