Healthy vegetable meatballs

Ingredients for 4 servings:

  • 50 g red bell pepper(s)
  • 50 g corn
  • 50 g onion(s)
  • 100 g low-fat curd cheese
  • 400 g minced beef
  • 10 g oat flakes
  • 20 g sesame or linseed or sunflower seeds
  • some salt and pepper
  • Paprika powder
  • oregano

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and finely dice the onion and bell pepper. Mix both with the ground meat, quark, corn, oats, seeds, and spices by hand. Form the mixture into approximately 28 small balls (4 cm in diameter). Place them on a baking sheet lined with baking paper and bake at 160°C (convection oven) for about 20 minutes. It’s best to test whether the balls are cooked using the largest one. In this recipe, the eggs have been replaced with quark and the breadcrumbs with oats. Combined with the vegetable filling and the seeds, this creates a much healthier version of the traditional meatball, delicious both hot and cold. The mixture is also suitable as a filling for zucchini.
