- 50 ml coconut milk, creamy (available in tetra pack in Asian shops),
- 2 tbsp flour
- 2 tbsp palm sugar from the coconut palm
- 1 banana(s)
- 2 tbsp oil
- 2 tbsp palm sugar, brown
- 2 tbsp cashew nuts, candied
- 3 tbsp caramel sauce
- Leaves and flowers.

Combine the egg, coconut milk, flour, and palm sugar in a bowl and mix with a hand blender until creamy. Peel the banana and cut it lengthwise into 5 pieces. Heat the oil in a pan and add the 5 banana pieces, forming a diamond with a center line. Fry for 2 minutes. Remove the pan from the heat and let it cool slightly. Carefully pour the batter into the pan, taking care not to destroy the diamond shape. Adjust with a wooden spoon if necessary. Return the pan to the heat and cook over low heat with the lid on until the batter has set. Remove the lid, sprinkle the pancake with 2 tablespoons of palm sugar and the candied cashews. Garnish with leaves and flowers, and serve with caramel sauce.
