- 12 chicken wings
- ½ tsp Quatre-épices spice mix OR:
- Allspice, ground OR:
- Spice mix (Chinese 5-spice powder)
- 2 tbsp honey
- ½ lemon(s), the juice
- 1 garlic clove(s), pressed
- 1 piece(s) ginger, approx. 1 cm, grated or pressed
- 3 tbsp sambal oelek

Quatre-épices is a spice blend that is very popular in France. This recipe tastes best with it, but you can also substitute it with allspice or Chinese 5-spice powder. Mix the ingredients together to make a marinade and let the chicken wings marinate overnight in the refrigerator. The best way to do this is to place the wings and marinade in a sturdy plastic bag, press out any air, seal the bag tightly, and then knead the bag until the wings are completely coated with the marinade. Preheat the oven to 180°C, spread the wings out on a baking sheet lined with aluminum foil (use aluminum foil because otherwise you won’t be able to get the baking sheet clean because of the honey in the marinade) and roast in the oven on the middle rack for about 45 minutes. The wings taste best when lukewarm.
