Ingredients for 8 servings:

  • 8 eggs
  • 300 g minced meat, mixed
  • 300 g minced beef
  • 4 tbsp chives
  • 1 egg yolk
  • 1 tbsp mustard, medium hot
  • 2 tbsp quark, fat content freely selectable
  • salt and pepper
  • Chili flakes or cayenne pepper as desired
  • 2 tbsp flour
  • 2 tbsp breadcrumbs
  • Oil for frying

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Easter recipe for “swallow nests”

Boil the eggs until soft-boiled. Place the mixed and ground beef in a bowl, along with the finely chopped chives, the egg yolk, 1 tablespoon of mustard, and 2 tablespoons of quark. Season generously with salt, pepper, and chili flakes or cayenne pepper. Mix everything thoroughly, form a large ball, and divide it into eight equal-sized pieces. Shape these pieces of dough into balls and then flatten them. Pour about 2 tablespoons of flour into a shallow bowl, add a little salt, mix, and then roll the boiled and peeled eggs in it. Pour the eggs onto the flattened pieces of dough and then coat them in the minced meat. Since the dough will shrink slightly during frying, it should be a bit generous. Make sure the seam is also tightly sealed. Place the breadcrumbs on a plate. Once all the eggs are coated in the minced meat, roll them in the flour. Heat plenty of oil in a pan, add the “Mock Bunnies,” and fry until crispy on all sides, turning frequently. Serve whole or halved, with or without a side dish. They taste delicious both hot and cold.
