Ingredients for 8 servings:
- 3 kohlrabi
- salt water
- 150 g cherry tomatoes
- 100 g meat sausage
- 3 large gherkins
- 4 m.-sized eggs
- 1 onion(s)
- 2 cups crème fraîche with herbs, 15% fat
- ½ bunch parsley or chives
- ½ tsp curry powder
- 1 tsp, leveled paprika powder
- 1 tsp mustard, medium hot
- Salt and pepper, white from the mill
- some cucumber water
Instructions
Working time approx. 30 minutes; Rest period approx. 1 day; Cooking/baking time approx. 10 minutes; Total time approx. 1 day 40 minutes
from kohlrabi
Peel and dice the kohlrabi, then cook in salted water until al dente. Let it cool and transfer it to a large bowl. In the meantime, hard-boil the eggs and let them cool as well. Dice the sausage and gherkins and add them to the kohlrabi cubes. Wash and quarter the tomatoes, then add them to the bowl. Peel and finely chop the eggs, and add them to the remaining ingredients. Peel and finely dice the onion, and add them to the salad. Place the crème fraîche in a small bowl. Add the mustard, curry powder, and paprika. Mix everything well and season with salt and pepper. Finally, stir in as much of the gherkin liquid as you like until the desired consistency is reached. Wash and finely chop the parsley and add it to the dressing. Mix everything together well and let it sit overnight. 190 kcal per serving
