"Fake rice salad" made from cauliflower

Ingredients for 4 servings:

  • 300 g cauliflower
  • 4 tomatoes
  • ½ cucumber(s)
  • 1 spring onion(s)
  • 200 g sausage (poultry sausage)
  • 1 garlic clove(s)
  • 3 tbsp yogurt
  • 1 tbsp mayonnaise
  • 2 tbsp chives, chopped
  • ½ tsp salt
  • 1 pinch(s) of pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Total time approx. 1 hour

Low-carb

Grate the cauliflower to the size of rice grains, season lightly with salt, and let it drain in a sieve over a bowl for at least 30 minutes. Then place the cauliflower in a damp kitchen towel and squeeze out any remaining moisture. Transfer to a bowl. Cut the remaining vegetables and sausage into small cubes or rings and add to the grated cauliflower. Scrape out any cucumber seeds with a teaspoon. Make a sauce from the crushed garlic clove, yogurt, mayonnaise, chives, and spices and mix with the vegetables.
