Ingredients for 4 servings:

  • 2 tbsp margarine
  • 1 tsp parsley, chopped
  • 1 ½ tbsp beef broth, granulated
  • 1 ½ liters of water
  • 1 egg yolk
  • 3 tbsp rice
  • Salt
  • 4 saffron threads
  • nutmeg

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

My grandmother’s legacy

Melt the margarine, lightly fry the rice, add the water and beef broth, and simmer for about 20 minutes. Add the parsley and nutmeg. Add the saffron and season to taste. Whisk one egg yolk with a little water (2 tablespoons) until softened, then stir into the finished soup.
