Fanta – Mandarin – Cake

Ingredients for 1 servings:

  • 4 eggs
  • 250 g sugar
  • 1 packet of vanilla sugar
  • 125 ml oil
  • 150 ml lemonade (Fanta)
  • 250 g flour
  • 3 tsp, leveled baking powder
  • 2 can/n mandarin oranges (approx. 175 g drained weight each)
  • 600 ml cream
  • 3 packs of cream stiffener
  • 5 packs of vanilla sugar
  • 500 g crème fraîche
  • 300 ml juice (multivitamin)
  • 3 packs of sauce powder, dessert sauce vanilla (no cooking)
  • 150 g cream

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Make a batter from the above ingredients. Spread the batter into a springform pan (I used the flower pan from Vemmina) or a baking tray. Baking time approx. 25 mins. Top/bottom heat approx. 180°C (preheated) Fan oven approx. 160°C (preheated) Allow the cake to cool in the pan. In the meantime, drain the mandarins (cut them in half once if necessary). Whip the cream with the cream stiffener and 3 packets of vanilla sugar until stiff peaks form. In another bowl, mix the crème fraîche with the remaining vanilla sugar and add the mandarins. Now lightly fold the cream into the crème fraîche mixture. Spread this mixture evenly over the cake. For the icing, mix the multivitamin juice and vanilla sauce with a mixer for about 2 minutes, spread it over the mixture and let it cool. Decorate with the cream as desired! NOTE: Instead of the mandarins you can also use 2 cans of peaches (approx. 470 g drained weight each) and instead of the crème fraîche you can also use sour cream!
