Collect elderflower

  • Take two normal cotton carrier bags and collect elderflower umbels in spring, which are easiest to cut with (garden) shears. You should concentrate on the approximately plate-sized umbels. If there are only smaller cones, you have to adjust the number of course ... I just collect until both bags are full. Please do not produce any clear-cutting on a plant, as the insects and bees also need something to live on. Simply shake off or blow off any animals. Make sure that the plants do not grow near roads or parking lots (pollution)!

Zirconia water

  • First, boil the water in a large saucepan, wait until it stops bubbling and then dissolve the sugar in the warm water while stirring occasionally. Stir in the ferric acid.

Prepare the syrup

  • In the meantime, cut off the stalks of the umbels very briefly. Cut the lemons into slices. Stir both into the lemon sugar water. Cover the pot or bowls with a tea towel and let rest for at least 2 days and stir 1-2 times a day.

Filter the syrup

  • Now stir the syrup again well and filter. Tea filters made of paper or a tea towel are suitable for this.

Prepare glass bottles (with screw or swing top)

  • Put the washed, open glass bottles in the oven and heat it up to approx. 80-100 ° C in order to disinfect the bottles on the one hand and on the other hand they do not jump due to the later lack of temperature shock when the hot syrup is poured in.

Fill syrup

  • If necessary, lay out the screw caps on the work surface, ready to hand. Place the hot bottles on the work surface. As an additional safety measure, I place the glasses on a damp, warm cloth to avoid a temperature shock = glass cracking. If the working height is too high for you, you can put the bottles in the sink filled with hot water ... if there is too much water, the bottles start to float. Use a funnel to pour the hot syrup into the hot bottles until they are full to the brim. Make sure the sealing edges stay clean. Close the bottles immediately and turn them upside down for about 10 minutes (hot!), Turn them back and let them cool down.

Remarks

  • A dash of elderflower syrup in cold or hot water is a real treat. And it should not be missing in the "Hugo" cocktail. Since this syrup is very intense and full-bodied, you only need very little and enjoy it for a long time.
  • My insider tip: Spice up homemade strawberry jam with elderflower syrup and blossoms ... simply fantastic! (The recipe is on file) Bon appetit!
  • With this recipe I received approx. 3250 ml golden yellow elderflower syrup.
