Ingredients for 8 servings:
- 75 g parsley, chopped
- 2 cloves garlic
- 40 g pine nuts, roasted
- 40 g almond flakes, roasted
- 65 g Parmesan, grated
- 150 ml olive oil
- salt and pepper
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Pesto di Prezzemolo
Puree all ingredients in a blender. Then grind into a paste in a mortar and pestle. Slowly add about a cup of olive oil until the paste thickens and becomes smooth. Spoon the pesto into a bowl, add the remaining olive oil, cover, and refrigerate.
