Ingredients for 2 servings:

  • 250 g chickpea flour
  • 750 ml water
  • 1 tsp salt
  • Rosemary, dried, or other dried Mediterranean herbs
  • pepper
  • olive oil
  • n. B. Vegetables to taste or what needs to be used up

Mix chickpea flour with water and salt until lump-free. Let stand for at least 20 minutes, or overnight. Stir occasionally if possible. Preheat the oven to 250°C. Coat a round pizza pan with plenty of olive oil. Stir rosemary and pepper to taste, along with a dash of olive oil, into the chickpea batter. Pour the chickpea batter onto the baking sheet. You can also add various raw vegetables such as tomatoes, peppers, or zucchini to the baking sheet. Place in the oven and bake for 20-30 minutes. The texture will then be soft on the inside and beautifully golden-yellow crispy on the outside. It’s also delicious with green pea flour. Suitable as a side dish for 4 people or as a main course for 2 people.
